1、用清水浸泡苦杏仁两天,可去除杏仁苦味。或是把苦杏仁用水蒸一下,不但能去除苦味还不会流失营养。苦杏仁含有苦杏仁甙及分解它的酶,蒸制时苦杏仁与水不会直接接触,苦杏仁甙就不会损失。

2、苦杏仁不可以大量食用,一天不要超过10粒。在食用苦杏仁的时候,一定要先在水中浸泡多次,并加热煮沸,减少以至消除其中的有毒物质。同时,一定要去皮、去尖。
