步骤:

将扇子骨、直通骨、尾脊骨、碎骨洗净, 然后投入开水锅烧开后转小火煮10分钟;将骨头取出,放入温热水中,用抹布将骨头逐根洗清爽, 尤其是骨头缝里的血沫、杂质,都要抹掉;然后将直通骨劈断,劈开两片,出尽骨髓,放在钢精锅中, 用细网筛过滤原汤,加入葱、姜、酒,用大火烧开, 再一次撇去浮沫,转小火炖至 3小时后出汤,即好;一般猪肉骨头汤能连续用,家庭中可煮9-10小时, 可取用2-3次,至扇子骨已酥化,骨头颜色呈灰暗色,汤质鲜味、 脂肪营养已用尽为止。
