乳酸菌生长不能有氧气的存在,所以要密封泡菜坛,隔绝空气;其他大部分杂菌如细菌、酵母等,需要在有氧气的环境中生长,所以密封泡菜坛,隔绝空气,能防止其他微生物生长、繁殖,这样泡菜就不会变坏了。
