用高筋面粉做成的饺子皮,比较劲道,也很耐煮,不容易破皮,平时我们家里包饺子用的饺子皮多为中筋面粉,不耐煮,而且容易炖烂。

我们可以通过其蛋白质含量进行区分。高筋粉蛋白质含量在10、5%-13、5%左右;中筋粉蛋白质含量在8、0%-10、5%左右;高筋粉蛋白质含量在6、5%-8、5%左右。

做饺子皮要的是高筋面粉而不是高精面粉,高筋面粉才是说明面粉的筋度,高精面粉,说的是面粉的加工程度,即精度。
