戚风蛋糕会塌的原因如下:

1、戚风蛋糕没烤熟。烘焙时间过短或者温度过低,导致蛋糕还没熟透就出烤箱了。蛋糕中部未形成气孔,这样的蛋糕出烤箱不久,温度降低就会塌陷;

2、烘焙过度。如果整个蛋糕颜色较深,表皮很厚很干,受到震动时整个蛋糕从腰部开始塌陷,那就烘焙过度了;

3、操作不当。频繁打开烤箱门或者蛋糕出烤箱后没有倒扣,也会造成蛋糕塌陷。

解决方案:

1、戚风蛋糕一般130度到140度烘烤45到50分钟。出炉前,用较长的牙签戳进蛋糕,一直戳到蛋
