四川清汤羊肉火锅的做法

锅底:

1、将羊肉切成麻将大小的块,经过飞水除去异味、血沫、杂质,洗净;

2、葱、姜、蒜、花椒、八角等佐料,葱洗净切成葱段,姜去皮切成块状,将佐料洗净入锅。加5至6倍干净凉水;

3、大火加热,待水沸腾时转成小火慢炖约两小时,加入适量食盐调味即可。切勿加其调味料会影响羊汤鲜美口感。

羊汤配料:

羊肉片、粉条、白萝卜、豆腐等。喝汤时撒入葱花末、香菜末等增香。
