求米饺子皮的做法

1、选籼米磨成粉末。大米有籼米、粳米、糯米之分,其中籼米黏性最差,所以选用籼米口感最佳,吃起来不粘牙。磨成粉末的大米,有些地方也叫碎米面,黏性比面粉低。

2、温水和面,刀压成皮。将锅置中火上,放入米粉500克和精盐10克拌匀,入锅炒至米粉温度至60℃左右时,加温水250克左右,搅拌均匀,使米粉充分糊化后出锅。

3、将粉团放在案板上稍凉,揉透,搓条,用刀切成每个重约45克的面剂,将案板上抹菜子油15克,把面剂揉成团,用刀压成直径8厘米、厚1.7毫米的大米面皮即可包裹馅心。
