淮阳菜系炭烧肉淹制作方法

做法步骤:

1、腌制调料拌均匀待用;

2、猪颈肉改刀去掉适量肥肉,在自来水里冲约2小时,拿起用干布吸干水分;

3、用腌制调料一块一块,将猪颈肉擦均匀,放在器具里,腌制约12小时;

4、将猪颈肉里的糖去干净,锅里放色拉油烧热,倒进猪颈肉炸至金红色,捞起沥干油;

5、猪颈肉改刀切好,装盘既可。

腌制糖浆配比:

1、腌制主料:猪肉;

2、腌制调料:糖7斤半,盐6两,味精10两,生抽4两,美极2两,烧汁2两,鸡粉2两(一箱算大约20斤)。
