淀粉为什么不能溶于水

淀粉有两种:一种叫直链淀粉,一种叫支链淀粉,在常温下,两种淀粉的溶解度都很小,但直链淀粉的溶解度比支链淀粉的溶解度稍大一点。

在沸水中,由于支链淀粉发生溶胀,所以支链淀粉易溶于沸水,而直链淀粉在沸水中不会溶胀,所以它在沸水中的溶解度和在常温下的差别不大。

实验室用的淀粉溶液,都是把支链淀粉溶于沸水,再冷却得到的。
