川菜大厨教你炒糖色的技巧

1、准备:100克糖,白糖、冰糖均可,250克开水,20克菜油或精炼油或调和油。

2、炒锅置中小火上烧热,下熟菜油或化猪油晃匀锅壁,然后倒会油缸里,用锅内残留的余油,保持小火,就可以下糖炒糖色了。

3、糖入锅后,用炒勺推着糖在锅内朝一个方向不停搅动,很快糖就开始融化,先后呈现出冒小黄泡的拔丝状,继而成冒金黄色大泡的嫩汁状,继续小火推炒,成酱红糖色状即可。
