火锅底料的调制如下:

一.原料:猪棒子骨1500克,牛棒子骨1500克,鸡爪骨500克,生姜50克,大葱150克,料酒100克,鸡精150克,味精75克,干辣椒750克,花椒75克,菜油适量。

二.具体步骤:

1、猪棒子骨,牛棒子骨洗净后敲破,鸡爪骨洗净,生姜拍破,大葱切断;

2、将猪棒子骨,牛棒子骨,鸡爪骨放入沸水锅中焯一水,然后捞出放入净水锅中;

3、净水锅中加入生姜,大葱,料酒,用大火烧开后,转用小火熬至汤色乳白;

4、捞出不必要的料渣,即可得鲜汤;

5、鲜汤中调入鸡精,味精,另将干辣椒,花椒投入炒锅内加菜油炒香,再放入汤中即可完成。
