一般来说,腌制时间一般为2天以内或者20天以上,这样咸肉就可以吃了。根据专家们研究,腌咸肉在开始腌制的2天内亚硝酸盐的含量并算不高,可是在第3—8天亚硝酸盐的含量达到最高峰,第9天以后开始出现下降的趋势,20天后基本消失。所以腌制咸肉一般时间短的在2天之内,长的应在腌制一个月以后才可以食用。我们一般都是用一块大石头或者其他东西压着咸肉,这样就可以避免咸肉流失水分。
