梅干菜酥饼的制作材料:面粉1250克,酵面500克,猪肥膘肉750克,梅干菜135克,葱末40克,精盐100克,食碱15克,芝麻仁75克,饴糖50克,芝麻油100克。梅干菜酥饼的特色:外层酥脆,内滋润鲜香,嚼之津津有味,是屯溪地区传统风味小吃。梅干菜酥饼做法:面粉放在案板上,先用沸水将1/6的面粉烫过,再与其他面粉拌匀,放入酵面和冷水500克揉匀,盖上湿布,静饧10分钟左右,然后加食碱揉透,搓成长条,摘成每个重约125克的面剂,烤箱预热200度,把饼放入烤箱中层,上下管200度,30分钟,表面上色即可,按自家烤箱温度适量调整时间。
