2、用保加利亚乳杆菌与嗜热链球菌的混合发酵剂时,温度保持在41℃到42℃之间,培养时间为2.5到4小时,达到凝固状态时终止发酵。发酵好的凝固酸乳,需要立即移人0℃到4℃的冷藏室中。在这样的温度条件下,可以抑制菌类的繁殖速度。
