油条里如何加起酥油和香料

油条里加起酥油和香料的做法如下:

配方:中筋面粉9、5斤,泡多源150克,碳酸氢钠50克,糯米粉或黄豆粉0.5斤,黄油或奶油或起酥油适量,白糖20到60克,盐70到100克,常温水6、1斤。

步骤如下:

1、面粉、糯米粉或黄豆粉、泡多源混合在一起,干拌均匀;

2、将盐、白糖、碳酸氢钠等加入和面水中搅拌溶解,再加入面粉及黄油和成面团,不需揉面;

3、将和好的面团用湿布盖好,醒发10分钟,揉捶一次,再次醒发10分钟,再次揉捶,揉成条状;

4、用保鲜膜包好,低温发酵8至12个小时;

5、取出成型,放入200度油锅油炸,不停地翻动,炸至酥脆即可食用。
