四川腊兔腌制方法

1、活山兔一只,要选择膘满肉肥的,越大越嫩越好。

2、宰兔剥皮,开膛掏尽内脏,去脚爪待用。

3、盐渍。将配料混匀后,涂擦胴体内外(也可用冷开水7.5千克溶解配料湿腌),平置于容器内,剩余的腌渍料撒在最上层,每天上下翻动1次,3天后取出整形。

4、整形。腌制好的胴体摊开放在案板上,肚腹朝下,将前腿扭至背后,用重物将其压平,撑开成板形,定形一定时间后,挂阴凉通风处晾干,一般7~10天即成。
