这是北方人的习惯,原因是:

绿豆芽做蒸面条时,不够膨胀,所以面条和绿豆芽就会卷在一起,用黄豆芽做蒸面条,则不会出现这类问题,因为黄豆芽有豆瓣,黄豆的豆瓣很大,能把面条与菜支撑出一个空间,所以蒸出来的面条不会因为不透气而粘在一起或者卷在一起。

或用芹菜做蒸面条的,加上一些肉块,味道更鲜美。
