苏州焖肉的做法

用料:

带皮肋条肉、盐、蒸鱼豉油、料酒、八角、香叶、桂皮、葱、姜。

做法:

1、将肉放在盆里,每一面都抹上盐,用砖块压着,让肉紧质,压出血水,腌五、六个小时;

2、拿出肉洗净,锅内放水,放入肉浸没,水开煮3分钟,洗掉肉上血沫,钳掉猪毛,处理干净;

3、锅内放水,水量是正好盖住肉的量,小火慢炖;

4、锅放水、葱、姜、香料煮开,倒入料酒;

5、水开后放入肉块,倒入蒸鱼豉油少许,盐1勺,冰糖少许,盖上锅盖小火煮一个半小时,然后把火候调到最小,不要开锅盖在炉子上焖个五,六小时;

6、将肉捞出,肋骨剔除,装保鲜袋里放冰箱速冻两小时;

7、待肉冷却后。切片装盘即可。
