炖品高汤制作方法

1、骨头冲洗干净,用清水浸泡一小时去血水,中间换水;

2、起锅烧热水,水开后下入骨头,煮出血水和杂质;

3、捞出,用热水冲洗表面的浮沫和杂质;

4、添加少量葱姜,添加没过的热水,大火煮开;

5、继续滚煮,撇净表面的浮沫,捞出葱和姜,盖盖转小火慢炖;

6、约一个半小时后,肉和骨头可以轻易分离了,关火;

7、漂在表面的油脂,待自然冷却凝固后,去除干净。把沉淀(过滤)后的高汤分装在保鲜盒或保鲜袋内,冷藏或冷冻均可。
