东莞油糍做法和配方

1、食材:糯米2300克,红板糖、绿豆馅各700克,花生油7500克(约耗375克)。

2、将糯米磨成浆,倒入布袋压干水分。

3、干浆掰散。红板糖下锅,加水200克熬成浓液,滤去杂质,与掰散的干浆揉成粘糖团。每次取糖团剂75克,稍按扁,包入绿豆馅,捏紧收口,放在净纱布上,用手指稍按成凹形状,制成油糍生坯。

4、大锅内加花生油,烧到四成热时,放入油糍生坯,用小火炸至浮出油面时改用中火,待油温升至六成热时,继续炸油糍,炸至金黄色时捞起,沥去油即可食用。
