魔芋粉就是一个有机高分子,粉粒内本身就会有许多空隙存在,而且这种高分子对水有极强的亲和力。

所以泡水以后首先分子本身会吸引很多水分子,然后水进入空隙以后就把整个粉粒撑大了,而且这水由于高分子对水的亲和力还跑不掉。

其实这种淀粉类物质吸水的原理都差不多,面粉也是如此。所以面粉加水成面团以后水也是挤不出来的。
