糖色很甜是因为糖色炒的时间太短,炒糖色时火侯要小,不停翻动糖油,待糖完全融化起泡时,观察糖油的颜色,到达所想要的颜色时,马上关火,加入适量的水烧开即可。

炒糖色的方法如下:

1、冷锅烧热后放入一勺左右的食用油。

2、紧接着倒入白汤,白糖的量没过油或者和油1比1,中火用锅铲炒开。

3、颜色接近棕红色时有泡泡冒出即可,再炒就过了,过了之后就会变苦。
