炒糖色为什么加水呢

是因为炒锅里温度过高,加入水时温度低,两者突然相遇时产生的反应,就会出现糖色。炒糖色共有三种方法,

一是油炒;

二是水炒;

三是水油混合炒。

炒糖色时,待糖液嫩汁或者糖色状态之后一定要加开水(切忌不能加凉水)熬制。
