粤式盘菜的做法

食材:五花猪肉、鸡肉、虾10个、小鲍鱼4个、香菇10朵、白萝卜1个、西兰花1个、枝竹、盐、花椒、葱、姜、蒜、八角、桂皮、香叶、老抽、生抽、糖、面粉、蚝油、干辣椒、香油、高汤。

步骤:

1、虾洗净去虾线、虾枪、虾须,做一点面糊,将虾炸好;

2、将五花肉、鸡焯掉血水,锅中放油,放入花椒、葱、姜、蒜、八角、桂皮、香叶、干辣椒,然后放入五花肉、鸡煎一下;

3、向锅中加水烧开,加入老抽、生抽、糖,烧至汤汁浓稠;

4、鲍鱼刷洗干净,放入热水中一分钟,再向锅中放入油,加入鲍鱼,加入老抽、生抽、蚝油焖烧半小时即可;

5、将西兰花用水焯,香油搅拌备用;

6、枝竹用水泡好,香菇切十字刀,枝竹、香菇用水焯,然后用高汤烧十几分钟入味,备用;

7、白萝卜去皮切成块状,焯水,然后用高汤焖烧半小时;

8、装盆时,最下面放萝卜,然后是枝竹,用西兰花装饰,五花肉、鸡肉切成块状,虾、香菇、鲍鱼分别装入。
