麻辣笨鸭火锅的配料和做法

材料:老鸭1只、鲜菜1000克、陈年酸萝卜100克、泡姜30克、泡椒50克、干老姜10克、大葱10克、盐5克、鸡精2克、胡椒粉2克、味精1克、色拉油50克、鸡油50克、骨头汤1000克。

做法:

1、 将老鸭宰杀干净,冲净血水,在沸水中氽10分钟左右氽去血水;

2、 酸萝卜改刀成3厘米长、0.5厘米宽的长条,泡姜切片,老姜切片,大葱切段待用;

3、 炒锅烧热加油烧到5成热下入姜、葱大火煸香,下酸萝卜条、泡椒、泡姜翻炒出香味,放入骨头汤、盐、鸡油大火烧沸;

4、 再下胡椒粉,改小火,放入老鸭小火熬煮至少2个小时,至汤白鸭香时放入鸡精、味精、葱段,带火上桌即可。
