烹饪的火候分哪几种

火候是指在烹饪过程中,根据菜肴原料老嫩硬软与厚薄大小和菜肴的制作要求,采用的火力大小与时间长短。火候是烹调技术的关键环节,一般分为以下三种:

小火:烹调的菜肴 如清炖牛肉,是以小火烧煮的;中火:适用于炸制菜 凡是外面挂糊的原料,在下油锅炸时,多使用中火下锅,逐渐加油的方法,效果较好;旺火:适用于爆、炒、涮的菜肴 一般用旺火烹调的菜肴,主料多以脆、嫩为主,如葱爆羊肉、涮羊肉、水爆肚等。
