肉类腌制是肉类通过加入食盐,料酒,一些香辛料等,通过物理作用渗透到肉组织里边能有效改善肉类的独特风味,增加底味,在烹饪中更容易入味,控制微生物的活动,抑制腐败菌的生长,从而延长肉的保质期。然而经过高温焯水后,肉纤维组织会脱水骤然紧缩,质地变得僵硬老韧,如果再腌制的话,食盐,香料等一些腌制调料很难通过纤维组织进入肉内,而失去了腌制的作用。
