泡鸡爪的制作方法和配料

1、原料:鸡爪2斤、糟卤一袋(400ml)或2/3瓶、白醋2/3瓶、泡山椒二瓶、花椒20粒、白糖一小勺、鸡精适量、盐一小勺。

2、器具:腌泡乐方盒。

3、制作方法:洗净剁开,过一下开水去除血腥味。锅内加水,葱料酒八角桂皮花椒鸡爪锅开后烧半分钟熄火捞出冲凉洗净再放入凉开水盒内凉透。腌泡盒中先放一袋糟卤(420ML)或瓶装(约大半瓶)+2/3瓶白醋(约280ml)+2瓶泡山椒(1.5元1.瓶)+花椒+白糖+味精+盐。将凉开水盒中鸡爪捞出放入腌泡方盒内放入冰箱2天后或1天即可食用。一般一次卤汁可用2次。
