腊肉如何去味

一般腊肉都比较咸,但盐味不足或者保存不好的腊肉很容易形成哈喇味,这时可以:

用淘米水浸泡两小时左右,清洗干净切成小块(便于哈喇味挥发),放入加有大葱和姜片的凉水锅(水稍微多点,不加盖)里煮沸。再加适量料酒(白酒)和盐继续煮至肉熟,捞起放通风处晾凉,切成自己喜欢的形状(片、条、丝),如果没哈喇味直接吃也行,或者进行再加工。将切好的肉放热锅里用中火爆出香味,喷点料酒、几滴醋继续翻炒,再配以青蒜苗、蒜苔或者仔姜、彩椒等植物调料一起炒熟即可,这时基本没有哈喇味了。最后加工时用的料酒和醋,就是让它们与腊肉的油脂混合生成另一种诱人的香味。
