卤水点豆腐最关键技巧

1、将200克黄豆浸泡超过12小时成饱满的状态,然后用豆浆机打成豆浆备用;

2、豆浆煮开后用纱布过滤出豆渣,煮开时需要直接虑出豆渣,放置一旁备用;

3、用约200克盐卤兑600毫升的水,然后不停搅拌直至盐全部溶解;

4、待豆浆稍微变凉后用小勺装盐卤水,将盐卤水加到豆浆中,边加边用勺子徐徐的搅动。待到搅动有阻力,豆浆呈大米粥状态即可;

5、将豆浆加盖静置,或者倒入定形箱静置,静置三小时后,轻压挤出水分,豆腐即可做成。
