方法:

先把干鱿鱼在凉水中浸泡2至3小时,再放入碱水中浸泡3小时左右,发透发足,立即捞出放入清水中反复冲洗,将浸入鱼体内的碱质全部除清,即可做菜用。

这时,鱼体涨大,呈鲜艳肉红色,有弹性。碱水的浓度是泡发鱿鱼的关键。水、碱、石灰的比例一般为8:1:0.3,调匀后再加一倍凉水即成。但泡发时,还要根据具体情况而适当变化。

如淡黄透明的嫩鱿鱼,碱水浓度要小一些,多掺些清水,而紫色老鱿鱼,碱水浓度要大一些;热天碱水要淡一些,冷天则要浓一些。在泡发过程中,还要注意加强观察,一旦涨发,色泽鲜润,随即捞出;否则,时间过长,会造成鱼体损伤。
