涮鱼锅汤料的做法

一、材料

牛油250克、菜油100克、郫县豆办150克、永川豆豉50克、冰糖10克、花椒5克、胡椒2克、干辣椒30克、醪糟汁20克、绍酒20克、姜米10克、精盐100克、草果10克、桂皮10克、排草10克、白菌10克、辣椒面250克、鲜汤1500克 ;

二、做法

1、炒锅置旺火上;

2、下菜油烧到6成熟后;

3、下郫县豆办(先朵细)煵酥;

4、速放入姜米、花椒炒香后立即下鲜汤;

5、再放入舂茸的豆豉、研细的冰糖、牛油、醪糟汁、料酒、精盐、胡椒粉、干辣椒、草果等佐料;

6、熬开后打去泡沫即成卤水。
