调料:

猪五花肉1000克,梅菜150克,豆豉15克,红腐乳10克,姜5片,蒜头5粒,白糖,川椒酒,深色酱油,浅色酱油,生粉。

制作流程:

1、将花肉刮洗干净,用清水煮至刚熟,取出,以深色酱油涂匀肉皮。烧热炒锅,下油,烧至七成熟,将肉放入油中,加盖炸至无响声,捞起,晾凉后改切成长8厘米、宽4厘米、厚0.5厘米的块状,排放在扣碗内,成风车形。

2、将豆豉、蒜头、红腐乳压烂成茸,放入碗内,加入川椒酒、盐、白糖1汤匙、深色酱油、姜片,调成味汁,倒入肉内,然后整碗放锅中蒸约40分钟取出。

3、将梅菜心洗净,切成长3厘米、宽1厘米的片,用白糖、浅色酱油拌匀,放在肉上,再蒸5分钟取出,滤出原汁,然后将肉复扣在深碟中,将原汁烧滚,加生粉水勾稀芡淋入深碟中即可。
