果酱软饼制作方法

1、材料:无盐奶油80g、糖粉35g、蛋黄1个、低筋面粉120g、泡打粉1/4t、蛋白15g、杏仁片、蔓越莓适量。内馅:果酱适量。

2、杏仁片、蔓越莓片用搅拌机搅碎;

3、无盐奶油室温软化后,加入糖粉,先用橡皮刮刀拌匀,再用电动打蛋器打发;

4、加入蛋黄,继续用电动打蛋器打发,至均匀的奶油糊状;

5、将低筋面粉、泡打粉一起筛入,用橡皮刮刀切拌均匀,加入杏仁、蔓越莓碎,继续用手抓匀成均匀的面团;

6、将面团包入保鲜膜内,冷藏松弛30分钟左右;

7、取面团约15g,用手轻轻地揉成圆球状,直接放在烤盘上,用手在中心处压成凹状,并均匀刷上蛋白;

8、盛适量果酱,填在面团凹处;

9、烤箱预热后,上下火180度烘烤25分钟左右,熄火后继续用余温焖10分钟左右即可。
