先放酱油,因为醋的沸点低,若先放醋,都挥发了,醋没有味道又失去了醋的营养价值;而酱油中含有油的成分不易散发。

醋不仅可以祛膻、除腥、解腻、增香,还能保存维生素,促进钙、磷、铁等溶解,提高菜肴的营养价值。做菜时放醋的最佳时间在两头,即原料入锅后马上加醋或菜肴临出锅前加醋。“炒土豆丝”等菜最好在原料入锅后加醋,可以保护土豆中的维生素,同时软化蔬菜;而“糖醋排骨”、“葱爆羊肉”等菜最好加两次:原料入锅后加可以祛膻、除腥,临出锅前再加一次,可以增香、调味。
