花生米里有水分在炸时挥发了一部分,炸完后很热,水分随着热量挥发,晾凉以后就变得很酥脆。其中炸花生米时要注意以下几点:

炸花生米是要记住“冷锅冷油冷花生”,把花生放入冷油锅里铺开;花生米要先过水,就是用清水清洗,晾干水分,过了水的花生就不容易表面炸黑;炸花生米时要开中小火慢炸,不停翻动,听到噼噼啪啪的声音才算完成;可以品尝,没有生味就可以关火,不要等到酥脆关火,那样油的余温就会使花生变糊。
