鸡肉排酸的方法:

1、将宰杀好的鸡肉放入降温室,20分钟内使鸡肉温度降低12℃;

2、对降温后的鸡肉喷洒淀粉酶水溶液,每千克鸡肉喷洒淀粉酶水溶液12到18g;

3、将鸡肉放入排酸室,在1到2小时内,使鸡肉的温度降至2、7℃,控制环境压强在1、1个大气压,环境相对湿度94%,贮存12到18小时;

4、在处理鸡肉的排酸的过程中合理控制温度和湿度,同时采用淀粉酶水溶液和高压处理,能更加彻底的完成排酸过程,使处理的鸡肉在口感得到了极大改善,味道鲜嫩。
