1、热锅凉油是厨师在烹饪时的常用方法,它的原理是热涨冷缩;

2、当铁锅加热后它会膨胀,这样物体会出现很多细小的孔,肉眼是看不见的;

3、当油倒进去后油迅速的进入小孔,同时物体收缩,这样油就留在了这些细小的孔内;

4、当烹饪的原料放入锅内,细孔中的油遇热又渗出这样在原料和锅中间有一层油隔着,这样就不粘锅;

5、同时要注意,铁锅在加热时千万不要烧红,否则会不起作用。
