黄酒发酵密封的原因是:

黄酒发酵是无氧发酵的过程,发酵是使淀粉和糖分发酵,转化为酒精,并使酒成熟增香。有发酵产生肯定就有气体产生的,气体的成分大多是二氧化碳。发酵的品温随自然温度而变化,一般品温不能大于20度,否则易引起酒醪的升酸。密闭时最好用棉塞。如果黄酒发酵不密封,就无法发酵。
