猪肉要斜切,猪肉的肉质比较细、筋少,如横切,炒熟后变得凌乱散碎,如斜切,即可使其不破碎,吃起来又不塞牙;猪肉不宜长时间泡水。猪肉烹调前莫用热水清洗,因猪肉中含有一种肌溶蛋白的物质,在15摄氏度以上的水中易溶解,若用热水浸泡就会散失很多营养,同时口味也欠佳。注意:

肉丝的水分,较干的肉丝,最好用水泡一泡。要给肉丝上点浆,抓匀挂均。上好浆的肉丝用温油滑熟后,再行烹调。也可以把上好浆的肉丝直接烹炒,烹炒的油量要多一点,火候要小一点。肉丝上浆前后可放入植物油或香油,抓均匀,然后在用油锅炒制。在肉丝入味前加点木瓜嫩肉粉(调料商店有售)腌制半小时,再行烹炒。
