猪肘子高压锅压大约20-25分钟左右。做法是:高压锅中放入凉水,将猪肘子放入,加热的过程中撇除沫子;在汤清亮的时候,加入老抽、糖、盐、料酒、花椒、大料,大火煮开;开锅后,盖上高压锅盖子,调成中火,大约20-25分钟左右即可。

猪肘子是猪的腿肉,分为前肘,也称前蹄髈,其皮厚、筋多、胶质重、瘦肉多,常带皮烹制,肥而不腻。宜烧、扒、酱、焖、卤、制汤等。如红烧肘子、菜心扒肘子、红焖肘子;后肘,也称后蹄髈,因结缔组织较前肘含量多,皮老韧,质量较前肘差。其烹制方法,和用途基本同前肘。
