腌制青鱼步骤:

1、首先将买来的青鱼肚子切开,去除内脏及鱼头内的鳃等,此过程一定要将鱼清洗干净,否则腌制过程中容易腐烂;

2、用粗盐仔细擦遍鱼的全身,特别是鱼身角落,鱼眼等,将鱼放入容器内,再用重物压之;

3、四五天后取出,开始晾晒,最好每天将青鱼晾晒,晾晒十几天后,即成青鱼干。
