浸泡:糯米清水浸泡,水高出米层20厘米。冬、春季气温15摄氏度以下,浸泡12小时;夏、秋季25摄氏度以上,浸泡8小时。夏季须换水1至2次,防米粒发酸;蒸饭:将浸好的糯米用水冲洗,稍沥干后上甑蒸饭。待大汽上足后再蒸10分钟;向米层洒入适量清水,再蒸至米粒膨胀发亮,不粘牙即可;拌曲:米饭出甑后,用清水冲淋降温,沥干水分,摊铺在竹席上。当降至25摄氏度时,迅速均匀拌入酒曲粉;发酵:把拌曲后的米饭装坛,冬、春季坛外加草垫保温,夏、秋季室温度保持25至30摄氏度。36小时后酒液渗出,色泽金黄,味甜微酸,酒香扑鼻,表明发酵正常;醋化:在发酵过程中,继续发酵3天,促使生成更多酒精。酒液开始变酸时,每50公斤蒸米加入清水200公斤,以降低酒液的酒精浓度,自然醋化;成品:坛内醋化后,夏、秋季需30天,冬、春季50天,醋液即变酸成熟。醋液上层清亮橙黄,中下层乳白略有浑浊,两者混匀即为白醋。
