正宗潮州卤水配方

1、配料:八角15克、三奈10克、桂皮10克、小茴8克、丁香5克、陈皮10克、甘草10克、蛤蚧1只、南姜150克、罗汉果2个、香茅30克、蒜头30克、干葱头15克、芫荽头30克;

2、汤料:老母鸡1只、棒子骨或排骨1500克、桂圆带壳150克、猪肥膘肉250克、蒜苔或蒜苗300克;

3、调料:精盐75克、料酒50克、鱼露10克、白糖50克、味精15克、红豉油30克、生抽300—500克、老抽250克;

4、做法:先将酱油、料酒、冰糖、精盐、味精放在瓦盆放在慢火上,约煮1小时后便成。香料和药材包须经常泡在盆中。卤水制成后,最好是隔日使用。
