烧烤用的鸡皮腌制方法如下:

浸漂。将鸡皮入清水中浸泡1至5小时,中途换水两三次,捞出净水。码味。码味原料与鸡皮拌匀,码味1至8小时,中途上下翻两三次。汆水。将鸡皮入沸水锅中氽一水,清水冲洗,净水。干花椒用微火焙香,老姜,大葱,八角,砂仁,白豆蔻,肉豆蔻,八角,桂皮,山柰,丁香,甘草,白芷,小茴香,草果,香叶等放入清水中浸泡,捞出,清水锅中汆水,冲洗沥水,与花椒拌匀,用两个香料袋分装。取一卤水桶,放人洗净的竹篾笆,投入香料袋、老姜、大葱、胡椒粉、冰糖、料酒、干辣椒节,掺人鲜汤,调入精盐,中火烧沸,改用小火熬至香气四溢时放入鸡皮、鸡精、味精,大火烧沸,去浮沫,改用小火卤至鸡皮熟软,移离火口,待鸡皮在卤水桶中浸泡20分钟后捞出,净卤水。鸡皮切成条,盛器中调入红油、香油、花椒粉、孜然粉、味精、酥花仁、熟芝麻、葱花拌匀。辣香鸡皮即已制成。
