发面是利用酵母菌无氧呼吸的发酵作用。酵母菌在有氧呼吸时,分解面粉中的糖,产生酒精,这是酿酒的原理;酵母菌在无氧呼吸时,分解面粉中的糖,产生二氧化碳和水,产生的气体使面团中充满气泡,蒸出来就蓬松可口。食用碱,即面碱,也叫小苏打,化学名称碳酸氢钠。碱面是面粉发酵后为了让面的酸度降下来而中和酸性的。面粉发酵后碱放少了馒头蒸出来是酸的,放多了馒头很硬,并且是黄色的,口感很不好。
