整只鸡的煲汤做法窍门

1、开膛嫩母鸡一只(约500克)。山菌50克、独蒜25克。猪油75克、葱10克、姜10克、盐3克、料酒10克、鲜汤750克。

2、制作方法:开膛嫩鸡洗净后,连骨剁成约2.5厘米大的块。山菌去根脚洗净,改小,用清水漂起。姜洗净拍破:葱、蒜洗净。炒锅置旺火上,下猪油烧热,放入鸡块,葱。姜炒出香味,加鲜汤、蒜烧开,舀入砂锅,用微火煨40分钟左右。炒锅置旺火上,下猪油少许烧热(约150℃)。将山菌沥干水入锅煸炒约3分钟,倒入砂锅内,加精盐,再用微火煨约20分钟至鸡块火巴,舀出盛于汤碗中即成。
