熟糯米比生糯米更容易被微生物分解,利于发酵,蒸熟的糯米可以高温杀菌,避免了其它杂菌的污染.其中主要目的是杀菌.

酿酒的具体操作过程是:

糯米浸泡一昼夜后淘洗干净;将糯米平铺在蒸锅内,用旺火蒸熟;用凉开水冲淋一次,待冷却至30左右,加入少许水和一定量的菌种,与糯米均匀搅拌后装入瓷坛内,在中间挖一个凹坑,再淋上一些凉开水;将容器盖好、保温,放置于温暖的地方即可.
