炸面鱼的面的做法及配方比例如下:

配方比例:宽面条200克,猪肉馅150克,豆腐干20克,虾米20克,黄瓜20克,香菇10克,大蒜2瓣。

调料:食用油30克,香油1小匙,酱油1大匙,豆瓣酱2大匙,甜面酱2大匙,白糖1小匙。

做法如下:

1、虾米泡软,香菇泡软,去蒂切丝;

2、豆腐干、大蒜洗净切末,黄瓜洗净,切丝;

3、锅中倒入油,烧至五成热,爆香大蒜末,放入猪肉馅、香菇丝、虾米、豆腐干及豆瓣酱、甜面酱拌炒,加入酱油、水、白糖和香油焖炸至出味,做成炸酱;

4、把面条煮熟,捞出盛入碗中,加入炸酱及黄瓜丝,拌匀即成。
