牛肉在空气中与氧气接触,颜色会发生变化。当新鲜肉置于空气中,开始是鲜红,约30分钟后,肉色会加深,变成紫色,随着时间延长,肉色会再变得发褐,这种变化在短时间内还会逆转,即肉色还会变红。但若时间太长,肉表面变质,肉色就会变褐,变绿甚至腐败,不能食用。
